I think its because of the gas that's inside of the egg that gets released and makes the egg stick to the shell with the hole and without it the gas only gets released when you break it open and makes it easier to peel.

You poke the eggs so the shell don't cracks while boiling, how easy it is to peel the egg depends on how old tbe egg is, fresh eggs are really difficult to peel, if the egg is a few this. older it will be more easy

Right before you boil it just tap the bottom of the egg wjth a spoon til you hear a crack and then it's a lot easier to peel
