BEEF AND BROCCOLI FRIED RICE 🔥The kind of fakeaway you’ll want on repeat. Tender, marinated beef and broccoli are tossed through fluffy jasmine rice with a rich, savoury sauce, then finished with a fried egg, chilli oil and sesame seeds. Macros per serve (serves 4) • 585kcal (inc. fried egg) • 42g P • 56g C • 20g F For the beef and marinade: • 500g lean steak thinly sliced • 1 tbsp oyster sauce • 2 tsp dark soy sauce • 1 tsp baking soda • 2 tsp cornstarch For the sauce: • 2 tbsp oyster sauce • 2 tbsp soy sauce • 1 tbsp dark soy sauce • 1 tbsp Shaoxing wine • 1 tbsp coconut sugar • 1 tsp sesame oil • 1/2 tsp each Chinese 5 spice & white pepper • 2 tbsp water For the rest of the dish: • ½ tbsp oil • 4 cups ‘day old’ jasmine rice • 4 cups small broccoli florets • 5 cloves garlic minced • 2 tsp ginger paste • 3 spring onions (whites and green separated) To serve: • 4 fried eggs, chilli oil, sesame seeds Method 1. Marinate the beef: Combine the beef with the oyster sauce, dark soy sauce, baking soda, cornstarch and white pepper. Set aside for at least 15 minutes. Meanwhile, mix all sauce ingredients together in a bowl. 2. Blanch the broccoli: Cover the broccoli with boiling water and leave for 1–2 minutes, then drain well. 3. Cook the beef: Heat a little oil in a wok or large pan over high heat. Add the beef in a single layer and stir-fry for 2–3 minutes until browned. Remove and set aside. 4. Fry the rice: Add the remaining oil over high heat, then stir-fry the garlic, ginger and spring onion whites for 1 minute. Add the rice, break it up and stir-fry for 1–2 minutes until hot and slightly toasted. Add the broccoli and sauce and stir-fry for another 1–2 minutes until well coated. 5. Finish: Add the beef back to the pan and toss until heated through. Stir through the spring onion greens then serve hot. Top with a fried egg, chilli oil and sesame seeds.
