I just made this and it’s wonderful. Substituted 3/4 c canned corn for the red pepper, sweet potato instead of russet, and half & half instead of heavy cream. Also added a handful of chopped spinach. It’s DELICIOUS!!! Thank you for this!!! ♥️♥️♥️

It was sooo good!! My friend made some and dropped me off recently. I had to make it afterwards. We used cottage cheese instead of the cream and it was delicious 🤤 going to the store after I take the kids to school to grab the ingredients to make a pot again today!!

Just made it and had good results! I used an immersion blender to give it more of a chowder consistency, and also added a dash of lemon juice at the end for brightness.
