Rub oil on the brinjal and tomatoes. Roast directly on a gas stove using tongs until soft and lightly charred. 2. Cool for 5 minutes, peel off skins, and mash well. 3. Heat oil in a pot. Fry chopped onion until golden. 4. Add garlic, turmeric powder, paprika powder, black pepper, and cumin powder. Sauté briefly. 5. Add the mashed brinjal–tomato mixture and salt. Cover and cook on low flame for 5 minutes. 6. Uncover, mix well, and garnish with green onions and fresh coriander. 7. Fry sourdough bread slices in butter until golden. 8. Serve hot with buttered sourdough.
