@amysheppardfood: Boursin Bolognese Soup I'm trying to do more meal prep, so last weekend, I cooked up a big batch of bolognese...and turned that bolognese into 3 dinners, big enough to feed 4 people... This is the easiest soup you'll ever make - to be honest, it's barely even a recipe, it's so quick, but it's so good I just had to share it. If you want to make this more filling, just add a pouch of cooked microwave rice and serve it with hot, buttery garlic bread. This freezes really well, so you can portion it up and use it for lunches during the week. A x Feeds 4 700g of (cold) bolognese 1.2 litres of beef stock 150g of garlic & herb Boursin Salt and ground black pepper Add the Bolognese, beef stock and Garlic & Herb Boursin to a large saucepan. Season with salt and pepper. Bring it to the boil, whilst gently whisking the cheese into the stock until it's one colour. Simmer on a low heat for 10 minutes until heated through.
