Commercial kitchens, restaurants and hospitals use stainless steel for prep surfaces not as cutting boards. This should be marketed as an easy cleanup prep surface that is portable, not as a cutting board. You’re right that “your knife will wear down long before this board ever does”. That is why you shouldn’t cut on it.

Super fun times :
Great for doing prep on but would not use it as a cutting board. A hardwood cutting board properly seasoned with oil is always going to be the best to cut on for your food and your knife.

I have several of the stainless steel cutting boards. Might have cheap knives. So, whether I'm using stainless steel or a wood cutting board or a plastic cutting board, I still have to sharpen it every single time. So I love the versatility, I love how thin they are I love how easily they are clean And disinfect., no wood going into my food, no plastics going into my food, I absolutely love them. Find

Cutting board? lol. I’ve worked at a few restaurants.. yes, they use stainless steel all over in kitchens. But never did we cut on the stainless steel.
