Here are some pretty little breakfast muffins. 3 mashed bananas 1 ½ cups almond milk (or oat milk) 2 eggs at room temp or stick them in your shirt 2 tablespoons maple syrup 2 tablespoons vegetable oil 1 tsp vanilla extract 2 ½ cups rolled oats 2 teaspoons baking powder Generous pinch (1/2 tsp?) of cinnamon pinch of salt 1 cup blueberries 1/2 cup chocolate chips Preheat the oven to 350F Mix the banana and the rest of the wet ingredients in a large bowl. Add the oats, baking powder, cinnamon, and a pinch of salt. Mix again. Fold in blueberries and chocolate chips. Fill muffin cups almost to the top. Bake for 25 min. SMILE. #amateurkitchen
