This is the sound of homemade kimchi 🌶️🥬 No words — just napa cabbages, hands mixing kimchi paste, and the lid closing tight. Homemade kimchi, from my kitchen to yours. 📌 Kimchi Recipe(For 2 napa cabbages) 🥬 Salting the cabbage 1️⃣ 3.5L water + 1¾ cups sea salt → soak quartered napa cabbages for 1 hr (flip halfway). 2️⃣ Drain (don’t rinse), sprinkle 1¼ cups sea salt between layers → rest 7 hrs. 3️⃣ Rinse & drain 1–2 hrs. 🌶️ Kimchi paste 1️⃣ 1½ cups water + 2 broth coins → boil, add ½ cup water + 3 tbsp sweet rice flour → thicken. 2️⃣ Blend 5 tbsp plum extract, ½ onion, 1 tbsp ginger → mix with cooled paste. 3️⃣ Add 5 tbsp salted shrimp, 10 tbsp anchovy fish sauce, 2 tbsp salt, 2½ tbsp garlic, 1 tbsp sugar. 4️⃣ Combine with 1 radish (julienned) + 2 cups chili flakes + green onion. 😋 Assemble Spread paste between cabbage layers.
