Had to share this one today in memory of the legendary Catherine O’Hara 💔 But now to answer the ‘fold in the cheese’ question… 1. You can fold it in during the stretch and folds. Sprinkle grated or cubed cheese over the dough before you perform each set of stretch and folds - that will incorporate it nicely into the dough. I show this method here for my jalapeño & cheese focaccia sandwich rolls. 2. You can also stuff it into the middle of the focaccia. After you’ve transferred the dough into the tray you can sprinkle a layer of cheese into the dough before folding up into thirds to proof in the tray. This method is shown in the garlic butter & cheese stuffed focaccia clips in this video. 3. While this isn’t folding it in, you can of course sprinkle cheese over the top of the dough or press cubes of it into the dimples before baking. When I do this, I always add a little more cheese over the top about 12 minutes into the bake time so the cheese doesn’t burn to a complete crisp. The new cheese layered over the top protects the cheese that was dimpled in from the beginning so you’ll get some crispier areas and some gooier areas! #catherineohara #foldinthecheese #focaccia #cheesestuffedfocaccia #schittscreek
