It always seems a bit off when they say that because I assume anyone of any gender who is talking with me is just being friendly and not hitting on me. But maybe some people assume they’re being hit on whenever someone talks to them so that’s why they say it?

That's cool that you have conversations with random men, and I agree that disclaimer would be nice. I never, NEVER have men talk to me and if some stranger is talking to me, they really aren't, they are literally only talking to the other person and they are not talking to me at all so there is zero misunderstanding.

I've actually said that to men and it never occurred to me that it might be insulting or a slight. I just assumed they're not attracted to me and would say no to a date, but I just think they're cool and they might be open to a friendship (guys that I have already interacted with and know slight). I hope they think the same thing you do - that I just want them to be comfortable.
