Cheese filled ravioli with a caramelized onion and fig jam cream sauce for dinner!  Wanted to incorporate our fig jam in a savory meal so I threw this together. Sweet, salty, and little spicy! Very rich and quite tasty!  (Also I rarely have exact measurements as I often eyeball my ingredients)  This made me 28 ravioli!  Sauce: 3 yellow onions  4 cloves of garlic  2 tablespoons of fig jam (can omit for sure) Salt and pepper Maybe 1/2 to 3/4 of a cup of heavy cream (add more if you need!)  Squeeze of lemon juice (i forgot and it definitely needs it!) Handful of toasted walnuts  Pasta dough: 1 and 1/2 - 2 cups of flour 2 eggs Salt and pepper  Filling: 3/4 - 1 cup ricotta 1/2 cup of grated mozzarella  1/2 cup sharp cheddar  Salt and pepper Red pepper flakes  Parsley Lemon zest  Slice/chop your onions and cook in pan with olive oil salt and pepper. It took about 45 mind to caramelize on a low medium heat (closer to low) In the meantime prepare the dough. Add the eggs and salt and pepper to the flour well and add flour into the egg center slowly until a dough forms. If it’s too dry add a splash of warm water and if it’s too sticky add more flour! Knead for 5-7 ish mins until smooth. Roll into a ball cover and let it relax.  Add the chopped garlic and fig jam to the onions and let the garlic soften for a few minutes. Then add the toasted chopped walnuts and heavy cream. Adjust the seasoning and I would add lemon juice here.  Keep the heat low and slow.  Roll out the pasta dough and add a tablespoon of the filling. Lay another sheet of dough on top and cut out your ravioli. I pressed the edges with a fork to make sure they were sealed.
