Heat heavy cream over medium-low heat until steaming. Add orange zest, remove from heat, and let infuse for 15 minutes. 3. Chop chocolate and place in a heatproof bowl. Strain the orange zest from the cream, then reheat the cream until steaming. Pour over chocolate and let sit 2 minutes. 4. Stir until smooth. Add butter and a pinch of salt and stir until completely melted. 5. Pour ganache into the chilled crust. Smooth the top and refrigerate for 3–4 hours or overnight. 6. For the candied oranges, bring water and sugar to a boil. Reduce heat, stir until dissolved, then add orange slices in a single layer. Simmer for 40 minutes. 7. Transfer orange slices to a cooling rack. Once cool, sprinkle with sugar and arrange on top of the tart.
