Cozy summer dinners are officially my new favorite. 🍂 Save this recipe for an easy one-pan dinner! 🤍 Ingredients * 6 bone-in, skin-on chicken thighs * 1½–2 lbs petite potatoes * 1 lb baby carrots * 1 large yellow onion, cut into wedges * 12 oz fresh green beans * 4 garlic cloves, minced * Zest of 1 lemon + juice for serving * 2 cups chicken broth * 2 tbsp olive oil Seasoning * 1½ tsp kosher salt * 1 tsp black pepper * 1 tsp garlic powder * 1 tsp onion powder * 1 tsp dried thyme * 1 tsp dried rosemary * ½ tsp smoked paprika Instructions 1. Preheat oven to 350°F. 2. Add the potatoes, carrots, onion, garlic, chicken broth, and half the seasoning to a large Dutch oven or oven-safe baking dish. 3. Pat the chicken dry. Rub with the olive oil, lemon zest, and remaining seasoning, then place on top of the vegetables. 4. Cover with foil or a lid and bake until the chicken is nearly cooked through and the potatoes are beginning to soften (timing will vary depending on your pan, chicken, and potato size, mine was like 1 hour). 5. Add the green beans around the chicken (or remove chicken and add into the juices if your pan is small) and continue baking until the potatoes are fork-tender and the chicken reaches 175–185°F. 6. Uncover and bake at 425°F for 10–15 minutes to lightly crisp the chicken skin. 7. Finish with fresh lemon juice. Gravy If you’d like a light gravy, pour some of the pan juices into a saucepan. Bring to a simmer and whisk in a cornstarch slurry (1 tbsp cornstarch + 1 tbsp cold water) until lightly thickened.
