Jalapeño Popper Chicken Bake 483 cals 58g protein 13g fat 32g carbs Cookbook in bio 🔗 Ingredients: this makes 6 meals 2 lb boneless, skinless chicken breast, cut into bite-sized pieces 1 cup jasmine rice, uncooked 2 cups chicken broth 225g broccoli florets, chopped fairly small 1 medium yellow onion, diced 4 jalapeños (3 diced, 1 sliced for toppings) 4 cloves garlic, minced 8 oz reduced-fat cream cheese 1 bag (196g) fat free cheddar cheese (Walmart) ½ cup reduced-fat shredded mozzarella 6 slices turkey bacon, cooked and crumbled Green onions for toppings Seasoning blend: 2 tsp garlic powder 1½ tsp onion powder 1½ tsp smoked paprika ½ tsp chili powder 1 tsp salt ½ tsp black pepper Optional: ¼–½ tsp red pepper flakes Directions 1. Preheat oven to 400°F. 2. Add the uncooked rice, chicken, yellow onion, jalapeños, garlic, and seasoning blend to a 9x13 baking dish. 3. Pour in 2 cups broth (all I had was beef broth - whatever you like) and stir everything together well. Make sure the rice is mostly submerged. 4. Cover the baking dish tightly with foil and bake for 35 minutes. 5. Remove from the oven and uncover. Add the chopped broccoli, cream cheese, 1/2 cup of the mozzarella, and the cooked turkey bacon. 6. Stir everything together thoroughly until the cream cheese is worked throughout the dish and the ingredients are evenly distributed. 7. Smooth everything into an even layer, then top with that full bag of fat free cheddar as well as the remaining sliced jalepenos 8. Return to the oven uncovered for 20–25 minutes (broil for last 5 mins for that browned color) until the broccoli is tender, the chicken is fully cooked, and the cheese on top is melted and lightly browned. 9. Let it rest for about 5 minutes, then finish with the sliced green onions over the top and enjoy! Follow for more #cooking #jalapenopopper #chicken #mealprep #healthyrecipes
