I've had decent success cooking in water. But it only works for the first batch, a second panful is terrible.
Baking it in the oven is definitely superior though!

Bacon in the oven is the best. Not only is it more crispy, but you have all that liquid gold to save!

Baked is the best but I don’t use the wire rack method. My method is to place bacon on a sheet pan in between two sheets of parchment. Yes it cooks in its own fat like a pan, but the distributed heat, it makes it crispier. It does seem to be a longer method, but I receive many compliments that it’s the best bacon they have ever eaten.

The water method made bacon MORE salty to me for some reason.

Do you have a tip for clean your wire rack after cooking bacon on it in the oven. That is the worst part of that method of cooking bacon.

I prefer bacon chewy, not crispy. I usually put it on a paper towel on a plate, covered with another paper towel being sure not to crowd it. I start with four or five minutes and then check. It often takes more and I add 30 seconds at a time to get to what works for that particular brand and thickness. I've also had good luck hanging it from a poly propylene storage container in the microwave on a plate and letting it render and crisp up as much as like.
