Creamy Polenta with Sausage & Spinach Ingredients: Serves 4 12 oz / 340 g Italian sausage, veggie or regular 12 oz / 350 g spinach 1 onion, sliced 3 garlic cloves, minced Juice of 1 lemon For the creamy polenta 4 cups / 950 ml vegetable broth 1 cup / 240 ml milk 1 cup / 170 g polenta (cornmeal) 1/2 cup / 50 g freshly grated Parmesan Method:  1/ In a large pan, add the sausage, breaking it up into small pieces as it cooks. This usually takes about 10 minutes, but check the package instructions since cooking time can vary depending on the polenta. Remove from the heat and stir in the Parmesan. Season with salt and pepper to taste. If the polenta gets too thick, just add a splash more milk or broth until it’s nice and creamy. 3/ Spoon the creamy polenta into bowls and top with the sausage and spinach.
