@yingjiafei: chinese tomato egg drop soup 3-4 servings * 2 tbsp oil (i sometimes use a homemade infused ginger scallion oil) * 4-5 medium tomatoes, halved or quartered * 5 cups chicken broth or stock (homemade preferable) or water (my parents only used water) * 2-4 eggs, beaten * dash white pepper * 1 tsp sesame oil * 1 tsp chicken bouillon powder * 2 tsp shaoxing wine * salt * 1-2 scallions add oil to pot on on medium heat. fry tomatoes cut side down with pinch of salt until they break down to a jammy consistency. add liquid and bring to a simmer. while you wait, crack eggs into a cup. add white pepper, sesame oil, chicken bouillon powder, shaoxing wine to eggs and beat together. once soup is simmering, use spatula to swirl soup in a circle and pour eggs into simmering soup to create egg ribbons. adjust to taste with salt and other seasonings that you used for the eggs. top with scallions and drizzle of sesame oil. eat as a soup or serve over rice or noodles. #breakfast #soup #fyp #creatorsearchinsights
