@angiesomm: This is unpasteurized sake (Nama / 生酒). Unlike most sake, it skips pasteurization, so the yeast and enzymes are still alive. What that means: • insanely fresh and aromatic • brighter, more explosive flavors • must be kept cold at all times What it also means: • it’s fragile AF • heat kills it • time kills it • it does NOT age like wine Most sake is meant to be drunk young. Unpasteurized sake? Even younger. Think weeks–months, not years. 📌 Always check the made-by date 📌 Store it cold 📌 Drink it fresh Moral of the story: Sake is not wine.
