That is either from the flank or shoulder end so why there is so much fat, that is why you need to look through the window on the back of the package so you can see the lean, fat ratio. Always go through the packages no matter what brand.

Girl cook it up that fat will become a delicious crispy chip. You just need to cook it a little longer. Its not gross. but it does look a little weird. Mind you Smithfield was sold to China, so do with that what you will.
