@ashleylamego: Marry Me Pasta ✨ 1 package of heart shaped pasta @barillacanada 3 tbsp of sundried tomato oil 1 shallot (finely chopped) 5 garlic cloves (finely chopped) 4 tbsp of tomato pasta 1/2 cup of sliced sundried tomatoes 1 oz of vodka 3/4 cup of softened cream cheese (I used @trestellecheese sundried tomato cream cheese) 1 cup of chopped spinach Salt and pepper for seasoning Chilli flakes (optional) Parmigiano cheese (garnish) In a large pan on medium-high heat, heat sundried tomato oil and sauté shallots and garlic for a few minutes. Add chilli flakes (optional) and tomato paste. Stir to combine. Pour in vodka and add sundried tomatoes. Allow to simmer for a few minutes to cook down vodka. Lower heat to medium-low, and add cream cheese. Whisk to combine the flavours and melt down the cream cheese. Please Note: if you do not have cream cheese, feel free to substitute for equal amount of heavy cream. Allow the cream to simmer and reduce on medium heat before adding any other ingredients. Add chopped spinach, season with salt and pepper and stir to combine. Once pasta is cooked al dente (1-2 minutes less than box instructions; reserve a cup of starchy pasta water before draining. Add cooked pasta into the sauce along with pasta water and on a low heat stir for 1-2 minutes to combine all the flavours. Garnish with Parmigiano cheese, basil, and more chilli flakes.
