It has a sharp floral aroma with hints of eucalyptus, mintiness, and a smoky depth. Nigella seeds (Tikur Azmud): are a strong aromatic, slightly bitter spice used sparingly but with great effect. It has notes of onion, oregano, and black pepper. It is also a potent traditional medicine for its anti-inflammatory properties, helping ease symptoms of conditions like asthma and are known to boost the immune system and aid digestive health. Bishop's weed (Nech Azmud/Trachyspermum ammi):has a strong, pungent flavour similar to anise and caraway, used sparingly to avoid overpowering a dish. Aside from clarifying butter, you would find it in certain biscuits and confectionery. In traditional medicine, it is used to treat chest pain (angina) and kidney stones. Koseret (Lippia abyssinica): also known as lemon bush, is a medicinal and culinary herb with a strong citrusy and minty aroma, which could be described as a mix between oregano, basil, and lemon.
