You literally consumed yourself into a rut. I’m sorry mate. I get it, you want to get the stuff that ”just works” but that mentality has made you choose products that are proprietary. I could go Linux tomorrow and all my specialty apps have Linux support or have a better than windows alternative.

Stream Deck absolutely works on Linux, there's open source software for it called open deck, that's just as good as elgato's software for it, though with the capture card I absolutely understand not switching to Linux, and for 3D design for 3d printing and what not, there's a browser/cloud based 3D design tool called onshape

to be fair, desktop notion IS just the browser version, if you really want it to be an app, you can make it one a headless browser window.

If you’re using macOS what’s the problem? You still have zsh, homebrew and apple hardware. This is a non issue.
