I live in Northern Maine. We don't have a highway. There's I-95 for a part of it. We have The Golden Road which is a heavily traveled truckers road through areas of the Allagash. Route 2. Route 2A which goes through Haynesville. Route 1 goes up through Presque Isle and Route 1A goes up through Easton. That's it. None of which are highways. Just saying.

After rolling out the dough, I filled half with a buttery cinnamon sugar filling and the other half with a Biscoff cookie butter filling loaded with crushed Biscoff cookies. Knead until the dough begins developing gluten, then add the softened butter a little at a time. Continue kneading until smooth and elastic. Bulk ferment until puffy, shape the rolls, refrigerate overnight, then bake fresh the next morning. Sourdough Cinnamon Roll Dough (Cups) Makes 12  1½ cups active sourdough starter 3 cups warm whole milk 3 large eggs ¾ cup granulated sugar 1 tablespoon honey About 12 cups bread flour 1 tablespoon + 1 teaspoon salt ¾ cup + 2 tablespoons softened butter Classic Cinnamon Filling Grams 113g softened butter 220g brown sugar 2–3 tablespoons cinnamon Cups 1 stick (1/2 c) softened butter 1 cup brown sugar 2–3 tablespoons cinnamon Biscoff Filling Grams 113g softened butter 120g Biscoff cookie butter 110g brown sugar 8–10 crushed Biscoff cookies Cups 1 stick softened butter ½ cup Biscoff cookie butter ½ cup brown sugar 10-13 crushed Biscoff cookies Butter each baking dish before adding the rolls.
