This might be the best salad I've ever made. Refreshing enough for this weather, filling enough to be a complete meal, & somehow hits every flavor & texture at once. Sweet, spicy, creamy, crunchy, nutty, fresh, smoky, umami... it's all there. The sauce alone is worth making. Steps: Make the sauce: Mix minced garlic & ginger, peanut butter, tahini, light soy sauce, rice vinegar (or regular), chili paste (or flakes), white pepper, sesame oil, & sugar to balance all. Mix until smooth & refrigerate until needed. Cook the chicken: Place chicken breasts in a pot with hot water & the white parts of the green onions, slices of ginger & garlic, coriander stems, white peppercorns, & salt. Skim off any foam, then cook for about 15–20 mins until the chicken easily shreds. Let cool, then shred. (Keep the broth & the rest of vegetables—we'll use later.) Cook the noodles: Cook noodles in the reserved chicken broth according to package instructions. Drain immediately and rinse under cold water until completely cool. Prep the vegetables: Thinly slice the green parts of the onions, carrots, and red bell pepper, & chop the coriander leaves. Crush some salted peanuts. Build: Add the shredded chicken, noodles, vegetables, coriander, crushed peanuts, sesame seeds, & the sauce to a large bowl. Mix everything really well (hands work best). Finish: Serve cold. Top with more crushed peanuts, sesame seeds, & fresh coriander. One of the most refreshing full meals you can make. Light, incredibly flavorful, packed with texture, and a great way to use every part of your ingredients.
