Yep. Rice is not evil. Carbs are not evil. My T1D bestie eats sushi all the time. It's just a matter of adjusting and making sure you have a protein and fiber source along with it.

Refrigerating rice works too! Cooling is what helps form resistant starch, so both refrigerating and freezing can do this. I personally prefer freezing because it's easier for meal prep and keeps longer.
Cooked rice keeps well for about 3-4 days in the fridge, while frozen rice keeps well for 1-2 months.
