Bring to a gentle simmer, cover and cook for about an hour, stirring occasionally, until the beef is tender and the gravy is thick. Remove from the heat and allow the filling to cool completely. Preheat the oven to 200°C. Line a pie dish or individual pie tins with puff pastry. Spoon in the cooled filling, leaving a small border around the edges. Cover with another layer of pastry, trim away the excess and press the edges together with a fork. Poke holes in the top to allow steam to escape. Brush with beaten egg. Bake for 25 to 35 minutes, or until the pastry is puffed and deeply golden.
