@jules_cooking: Passionfruit cremeux recipe 🔥 200 grams of passionfruit juice 300 grams of cream 80 grams of egg yolk 100 grams of sugar 20 grams of cornstarch 200 grams of white chocolate I always try to use fresh passionfruit juice, because the flavorful is so much better than puree. Mix 200 grams of passionfruit juice with 300 grams of cream, 80 grams of egg yolk, 100 grams of sugar and 20 grams of cornstarch. Then while stirring bring it to a simmer to thicken the cremeux. Now with big recipes I prefer to first bring the liquid to a simmer and add it to the starch and egg yolk, but with small quantities you can just mix it all and do it all at once. Then transfer 200 grams of white chocolate into a bowl and pour the hot cremeux on top. Now blend it till smooth and fully emulsified. Then cover it and let it cool down in your fridge.
