Pulled pork:
Best cut is a bone in Boston butt.
Rise under water then pat dry.
Youโre welcome to trim off some of the fat cap (the hard white part on the top) for a less fatty result.
Coat with your favorite rub ( I love Rogerโs rub which is often homemade).
Let rest in fridge overnight.
Smoking process:
Heat up your smoker to 225-250F.
Add in your meat straight on the rack with a probe in the thickest part.
Plan to cook for roughly 1-1.5 hours per pound.
Every 1-2 hours spray with apple juice or apple cider.
When you notice your temp starts to stall and not rise, remove and wrap in foil (make sure to re place the probe).
When the meat has reached an internal temp of 200-205F pull it out and keep it wrapped.
Place wrapped meat in a cooler to rest for at least 1 hour (ideal is 2-4) and absorb the juices (this will make it easier to shred).
After resting pull out the bone and shred.
Then coat with your favorite sauce although itโs not needed!
Rogerโs Rub:
1/4 cup finely ground coffee (dark roast works well)
2 tbsp brown sugar (packed)
2 tbsp Smoked paprika
1 tbsp Kosher salt
1 tbsp Black pepper
1 tbsp Garlic powder
1 tbsp Onion powder
1/2 tsp Cayenne pepper (optional, for heat)
