I completely agree with you. Also live in a small city in Canada and I’ve worked my way up in high end restaurants in a bigger city in high school and managed a small restaurant for a year before I decided to go to culinary school. So glad I chose that path over apprenticeship because I’m fast tracking my red seal. And many of my classmates dropped out after first semester

Culinary school is actually a great path to take in ontario. My culinary school allows me to be eligible for my red seal after my second year and i went to school straight out of highschool

It’s true that everyone situation is unique so there is no right answer but your own. I realized I wanted to be a chef after my last year of udergrad. So while I was doing that I worked part time at a restaurant as an expo. And after I graduated I planned to move onto culinary school. Alas COVID happened l. Didn’t end up going. Went back to work got promoted to prep cook and the work offered me to go to culinary school as long as i worked for them again but then they closed down. Jumped to a different kitchen and now a chef de partie there. Sometimes I still think about going to culinary school but been in the game for almost 10 years now personally it doesn’t feel as worth. Doesn’t mean it won’t be worth it for one of you. It truly just depends on your circumstances. But the one thing I would say is try not to let the passion die it’s easy to get burnt out in this industry. It’s harder to keep the passion and the reason why you like to cook.
