Pour in the broth, stir well, then increase the heat to high. Bring to a boil, cover, and reduce to medium-low. Cook for 10–12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed. Lower the heat and stir in the Parmesan, heavy cream, and Monterey Jack until melted and creamy.
