@fooddolls: creamy spinach & artichoke pasta #pasta #onepotpasta #fooddolls RECIPE 16 oz uncooked caserecce pasta (or similar shape) 3 cups fresh baby spinach 14 oz artichoke hearts, rinsed, chopped & squeezed dry 4 garlic cloves, minced 2 tsp sea salt, to taste 1 tsp freshly ground black pepper, to taste 2 tsp dried oregano ½ tsp crushed red pepper flakes (optional) 4 cups low-sodium vegetable or chicken broth ¾ cup shredded Parmesan cheese ½ cup heavy cream 8 oz freshly grated Monterey Jack cheese Instructions Add the uncooked pasta, spinach, artichokes, garlic, salt, pepper, oregano, and red pepper flakes to an enameled pot or Dutch oven over medium-high heat. Pour in the broth, stir well, then increase the heat to high. Bring to a boil, cover, and reduce to medium-low. Cook for 10–12 minutes, stirring occasionally, until the pasta is al dente and most of the liquid is absorbed. Lower the heat and stir in the Parmesan, heavy cream, and Monterey Jack until melted and creamy.
