Prepare the Ampalaya: Slice the ampalaya in half lengthwise and remove the seeds and white pith with a spoon. Slice thinly. To reduce bitterness, soak in salted water for 10-30 minutes, then rinse thoroughly and squeeze out all the excess water. 2. Sauté Aromatics: Heat oil in a pan over medium heat. Sauté garlic and onions until softened and fragrant. Add tomatoes and cook until they are soft and the juices are released. 3. Cook Ampalaya: Add the sliced ampalaya to the pan. Sauté for 3–5 minutes until the ampalaya is tender-crisp. Optional: Add a small amount of water if you prefer it softer. 4. Add Eggs: Push the ampalaya mixture to one side of the pan. Pour the beaten eggs onto the other side and let them cook for about 30 seconds to a minute until partially set. 5. Combine and Season: Stir everything together, allowing the eggs to fully coat the ampalaya. Season with salt, pepper, or fish sauce. Serve: Transfer to a serving plate and enjoy while hot. 😋
