@ninipaninipa: Not many rice farmers in Japan still practice Hazakake. Machines made the drying process faster and easier. But still it is said that the rice made this way, taste different. In this fast paced world continuing this technique feels like a gentle resistance, choosing harmony with nature and its timing. The time spent on the fields deeply inspired me.
