@pinchofmint: Crispy Oven-Roasted Chickpeas – Two Seasonings Prep Time: 10 minutes
Cook Time: 35–45 minutes
Serves: 4 as a snack Ingredients 400g x Can of Cooked Chickpeas (drained and rinsed) 30ml x Olive Oil (or avocado oil) Seasoning 1 – Spicy Smoky 1 teaspoon x Smoked Paprika ½ teaspoon x Ground Cumin ½ teaspoon x Chilli Powder ¼ teaspoon x Black Pepper ¼ teaspoon x Sea Salt Seasoning 2 – Herby Garlic 1 teaspoon x Garlic Powder 1 teaspoon x Dried Oregano 1 teaspoon x Dried Basil ¼ teaspoon x Sea Salt Method 1. Prep the Chickpeas Preheat oven to 200°C (400°F). Drain and rinse the chickpeas. Spread them on a clean kitchen towel and gently pat completely dry. Optional but recommended: Rub gently to loosen skins; remove them for extra crunch. 2. First Bake (Unseasoned) Spread chickpeas evenly on a baking tray lined with parchment paper (don’t overcrowd). Roast for 25 to 30 minutes, shaking the tray halfway through. 3. Make the Seasonings Spicy Smoky: In a small bowl, mix smoked paprika, cumin, chilli powder, and black pepper. Herby Garlic: In another small bowl, mix garlic powder, oregano, parsley, and sea salt. 4. Season & Final Bake When chickpeas are golden and nearly crisp, remove from oven. Split them into two bowls. Drizzle each olive oil, sprinkle with their seasoning blend, and toss well. Return to oven for another 5 to 7 minutes to lock in flavour and crispness. 5. Serve Let cool slightly, they crisp up even more as they cool. Enjoy as a snack, sprinkle over salads, or use as a crunchy soup topping. #crispychickpeas #snack #recipes #Recipe #cooking
