Do you like ridiculously good salads?  This salad dressing combination is just incredible! If you are wanting to get more veggies in this year, you’ve gotta try this. And if you want to pair it with protein, it would go amazing with chicken, shrimp or even tofu or tempeh if you’re doing plant based. . You can switch up any of the veggies, but this combo felt perfect. Here’s how I made it: . 1.First, the base. I finely chopped half a green cabbage, a large handful of baby kale (you can use baby spinach, too), finely diced 3-4 Persian cucumbers, 1 red bell pepper, and a handful of fresh cilantro. Throw these into a bowl once diced. Remember, the smaller the chop, the better. This way you can get a bit of everything with each bite. . 2.I added toasted pumpkin seeds for a little crunch. But feel free to leave it out or sub in your favorite nut (peanuts would be great here, as would pecans). . 3. For the dressing, grab a small food processor and toss in a chunk of ginger (about 2 inches), 3-4 cloves fresh garlic, 4 tbsp mayo, 5 tbsp rice vinegar, 2 tbsp sesame oil, a couple pinches salt, and pepper. Process really well. Give it a taste, and add whatever else you’d like. This has a solid ginger and garlicky punch, so feel free to dial it down based on your own preferences with more mayo or rice vinegar . 4.Add the dressing to the salad, toss well, ensuring all veggies are thoroughly covered. . 5.Feel free to top it with toasted white sesame seeds or even more seeds or nuts. . 6.Devour as is or top with your favorite protein. .
