@chefjjskitchen: Lamb Rogan Josh @canarybasmati The cat jumped on the table and I had to fight him for the lamb! If you notice any hair on my dishdash or my hands blame the cat. But that’s how good the dish is 😂 Ingredients: - 5 bay leaves - 2 sticks of cinnamon - 5 cloves - 4 cardamom pods - 1 tbsp fennel seeds ( or 1 tsp powder ) - 1 tbsp ginger powder - 1 tsp cumin powder - 1 tsp coriander powder - 2 kgs lamb shanks - 2 cups washed & soaked @canarybasmati - 1 tbsp Kashmiri chili powder - 1 to 2 tbsp tomato paste - 1 can of tomatoes ( optional ) - 3 tbsps yogurt - 1 tbsp garam masala - start by toasting the aromatics with the chili powder then add the lamb shanks. - add the spices the tomato paste & sear them till the shanks take a bit of a color. - add the tomato can along with the water then cook the lamb till fork tender. - toast the same aromatics in a drizzle of oil then add the washed & soaked rice and season it with salt. - add 2 cups of water & a 1 cup of milk ( optional but makes a huge difference in the aroma ) and once the water gets absorbed drop the heat to the lowest possible. Cover and let it cook for 20 minutes. - once the lamb is tender. Add the yogurt. Garam masala and let it thicken uncovered for 10 minutes - garnish the shanks with onions and coriander.
