1 1/2 tsp. Baking powder
1/2 tsp. Salt
1 C. Sugar
2 TBS. Lemon zest
3 large eggs
1/2 C. Sour cream
1/2 C. Vegetable oil
2 TBS. Lemon juice
1 tsp. Vanilla Lemon Icing: 1 1/2 C. Powdered sugar
2 TBS. Lemon juice
1/2 tsp. Vanilla 
1-2 tsp. additional lemon juice (only if needed) Preheat oven to 350°F. Lightly grease a loaf pan and line the bottom and sides with parchment paper. Whisk together flour, baking powder and salt. In a separate large bowl, rub the sugar and lemon zest together with your fingers until fragrant. Whisk in the eggs one at a time. Add sour cream, oil, lemon juice and vanilla and whisk until smooth. Add the dry ingredients and gently mix just until combined. Do not overmix. Pour into the prepared loaf pan and smooth the top. Bake at 350°F for 50 to 60 minutes or until a toothpick inserted into the center comes out with no wet batter. Loosely cover with foil if the top browns too quickly. Cool in the pan for 15 minutes, then lift out and cool completely. For the icing, whisk together the powdered sugar, lemon juice and vanilla until thick and smooth. If needed, add additional lemon juice about a 1/2 teaspoon at a time. Spread over the completely cooled loaf and allow the icing to set before slicing.
