30 yr builder here. Spray foam is the worst product you can use. Rip it out. Add breathable bat insulation. Fix the leaking windows.

My sister and brother in law live in a converted shed to a tiny home, they had the same issue at first,they have a loft above the bedroom area used for storage,when they found the mold, they was told by a builder to vent it to allow air flow and prevent moisture buildup,so they put in small one (the kind that spins) in the loft area to allow air flow, they’ve had no more issues since..

Just that little bit of gap between the 2x4s will create moisture. You should chalk any cracks between 2x4s or any gaps .

I tightened up my attic, almost completely air tight to the rest of the house and insulated it. I now have to run two dehumidifiers during peak corn/humidity in the summer now. The house has turned into a zip lock bag. We're getting minimal moisture loss during the winter as well and maintaining 30-35% during "normal" temps.

you need spray foam in around that window brother. that cold air and warm air are meeting causing that condensation I've seen it a million times. new windows should be in the works too

You also need a dehumidifier. If the living space was under 65% humidity, mold wouldn’t grow even with a leak. You need a dehumidifier running set to auto 55% after you fix all this
