@marion.adraste: Dark chocolate and coffee cake with espresso soak and chocolate cream cheese frosting Recipe for 9 large slices: - 240g cake flour or 255g AP flour - 130g sifted black cocoa powder or Dutch processed (not the same as cacao powder) - 8g baking powder - 5g baking soda - 7g salt - 310g sugar - 2 large eggs - 80g extra-virgin olive oil - 40g neutral oil (or more olive oil if mild enough) - 300g milk - 150g hot espresso or strong coffee - Splash vanilla extract Espresso soak: - 40g espresso or strong coffee, hot - 15g caster sugar - Pinch salt Mix everything together until the sugar dissolves. Whisk all dry ingredients (+ sugar) together in a large mixing bowl. Whisk egg with oils, then add milk and vanilla. Combine wet and dry ingredients then whisk in hot coffee last. Pour the batter in a baking pan (I used 21cmx21cm) lined with baking paper. Bake at 170 °C fan for 38-42min min until a knife comes out clean (the middle should still be soft). Cool fully. Poke shallow holes and add the espresso soak. Chill in the fridge for 30min and then flip the cake. Add the frosting on top. For the frosting: - 80g unsalted butter, soft - 200g cream cheese - 90g icing sugar, sifted - 40g dark cocoa powder, sifted - Splash vanilla - 2g salt - 20g double cream Beat butter until pale.
