@taryneliseee: this corn dip is 🔥🔥🔥🔥 Corn Dip Ingredients: * 40 oz bag sweet frozen corn * 1 can Rotel, drained * 1 can diced green chiles * ½ red onion, diced * 1 raw jalapeno, de-seeded & diced * ¾ block cream cheese, cut into cubes * 2–3 big squirts mayonnaise * 2 big spoonfuls sour cream * pepper-jack & sharp cheddar or 1/2 bag of mexican blend (I just add whatever amount of cheese till I think it looks good 🫣😁 I don’t really measure it) * 5–6 slices bacon * Salt, pepper, and other seasonings to taste Instructions: 1. Fry bacon until crispy. Remove and crumble, leaving some of the bacon grease in the pan. Set some bacon aside for topping. 2. In the same pan with bacon grease, cook diced onion and jalapeno until the onions are translucent. 3. Pour in the frozen corn and cook until heated through. Season with salt, pepper, and any other preferred seasonings. 4. Stir in drained Rotel and diced green chiles. 5. Add cubed cream cheese and stir continuously until fully melted. 6. Stir in mayonnaise and sour cream until smooth. 7. Mix in the shredded cheese until melted and creamy. 8. Top & serve: Sprinkle with crumbled bacon and additional cheese if desired.
