it just seems like the training to become a knight was all about schmoozing the nobility and learning about fighting and warfare but then 95% of your day to day life is dealing with drunken disputes from your peasants

Don't forget that there were people who were expected to become knights who went to great lengths to dodge it because being a knight was actually quite expensive. There were lords hunting them down trying to catch them and make them knights so they had more soldiers and more people to pay taxes to them. 30 year old squires hiding in the woods because they heard the lord was nearby and they just don't have that kind of money

How accurate is A Knights Tale? Which was such a fun movie. Heath Ledger was charming. Rufus Sewell was intimidatingly handsome. I never expected a knight movie that doesn't have swords clashing even once could be so entertaining

What would commoners who were good at fighting do then? Did they have some kind of social hierarchy/ladder to climb? I know there were some mercenary companies formed but what about peace time military roles?

Fun fact: Between the 9th and 11th centuries, there existed a class of commoner knights on the border between the Christian kingdoms of Spain and the Caliphate of Córdoba called "caballeros pardos" (brown knights). These knights had horses and weapons they paid for themselves, but they were not of noble birth, unlike noble knights known as "caballeros infanzones." Whenever I read about knights-errant, Game of Thrones reminded me of them.

There are also pages in Westeros but their roles are never described. Tywin Lannister was a page for the Royal family when he was young, and Jaime served Lord Crakehall as a page before he became a squire.
