Tonight’s dinner is inspired by @mezemike 🌯 Ingredients Spicy tomato sauce:  1 tbsp olive oil 3 tomatoes 2 cloves garlic, minced 1 tbsp chopped cilantro 1/2 tbsp red pepper flakes (adjust to taste) 1 tbsp paprika Salt & black pepper to taste Doner Kebab 1 lb ground beef (85 Lean/15 Fat) 3 tbsp Greek yogurt 1 tbsp paprika 2 tbsp baharat seasoning (homemade mix below): 1/2 tsp curry powder 1/2 tsp black pepper 1/2 tsp allspice 1/2 tsp cinnamon 1/2 tsp cardamom 1/4 tsp cumin 1/4 tsp cloves 1/4 tsp nutmeg 1 tbsp onion powder 3 cloves garlic, minced 1 tbsp black pepper 1–1.5 tsp salt (start with 1 tsp and adjust) Vegetables for roasting: 1 large tomato, cut into fourths 1 onion, cut in half 2 jalapeños Olive oil, salt, pepper Pickled Onions: 1 medium red onion, thinly sliced 3 tbsp chopped cilantro 1/2 tbsp red vinegar 1 tbsp sumac Salt to taste Mix all in a bowl and refrigerate. Garlic Sauce: 1/2 cup mayonnaise 1 1/2 tbsp olive oil 4 cloves garlic, minced Instructions 1. Make the Spicy Tomato Sauce -Cut about 1 inch off the top of each tomato (for easier peeling). -Heat 2 tbsp olive oil in a pan over medium-low heat. -Add tomatoes and cook for 15 minutes until skins loosen. -Peel the skins, mash the tomatoes, and add garlic, cilantro, red pepper flakes, paprika, salt, and pepper. -Cook a few more minutes, then remove from the pan and set aside. Keep the pan for later. 2. Prepare the Doner Kebab Meat -In a bowl, mix beef, yogurt, paprika, baharat, onion powder, garlic, black pepper, and salt. -Place the meat between two sheets of parchment paper and roll it out thin. -Remove the top parchment sheet and roll the meat into a tight log. -Transfer to an oven-safe dish and surround with tomato quarters, onion halves, and jalapeños. -Drizzle vegetables with olive oil, salt, and pepper. 3. Cook -Bake at 400°F for 25 minutes. Remove from the oven. -Heat the pan used for tomato sauce over medium-high heat. -Unwrap the kebab from parchment and place it in the same sauce pan. -Spoon some flavored oil from the baking dish over the meat. -Sear for 2 minutes to get a nice crust. 4. Assemble -Warm lavash bread -Layer garlic sauce, spicy tomato sauce, sliced doner meat, pickled onions, and jalapeños. -Serve with fries on the side. #beef #fries #sandwich #lunch #dinner
