Ingredients: - 1 cup quinoa, rinsed - 1 lb lean ground beef (90% lean or higher) - 2 cups fresh spinach, chopped - 1 red bell pepper, diced - 1 cup cherry tomatoes, halved - 3 cloves garlic, minced - 1 tablespoon olive oil (extra virgin) - Juice of 1 lemon - 1/2 cup feta cheese, crumbled (preferably reduced sodium) - 1 teaspoon dried oregano - 1/2 teaspoon turmeric (anti-inflammatory) - Salt and pepper to taste (limit salt) - Optional: fresh basil for garnish Instructions: 1.
