Coq au Vin🐓🍷 Ingredients (Serves 4–6) Marinade: • 6 chicken drumsticks (or mixed chicken pieces) • 750ml red wine • 1 onion, sliced • 4–5 bay leaves Stew: • 200g smoked bacon, diced • 2 carrots, sliced • 1 onion, diced • 250g mushrooms, quartered • 2 tbsp tomato paste • 500ml chicken stock • 1 tsp dried rosemary (or fresh thyme) • 2 tbsp plain flour • 1 tbsp butter (optional) • Salt & black pepper Instructions 1. Marinate:     Add the chicken, red wine, onion and bay leaves to a large bowl.     Cover and refrigerate overnight. 2. Prepare:     Remove the chicken from the marinade and pat completely dry.     Strain the wine and reserve it. 3. Reduce the wine:     Pour the reserved wine into a saucepan.     Simmer for around 20 minutes, skimming off any foam that rises to the top. 4. Brown the chicken:     Cook the bacon until golden and crispy.     Remove and set aside.     Add a little butter if needed and brown the chicken on all sides.     Remove and set aside. 5. Cook the vegetables:     In the same pan, cook the mushrooms until golden.     Remove and set aside.     Add the onion and carrots and cook until softened. 6. Build the stew:     Stir in the tomato paste and flour.     Add the reduced wine and chicken stock.     Add the rosemary.     Return the chicken and bacon to the pot. 7. Simmer:     Cover and cook gently for around 30 minutes. 8. Crisp the chicken:     Remove the chicken and place under a grill for 15–20 minutes to crisp up the skin. 9. Finish the sauce:     Continue simmering the sauce until rich and slightly thickened.     Strain if desired for a smoother finish.     Stir in a little butter for extra richness. 10.
