Can you please explain more about emulsifiers? My understanding is that emulsifiers weaken the gut lining and that by damaging the gut lining/ mucus layer (barrier) bacteria and other harmful stuff* enters the bloodstream which causes inflammation… which is linked to obesity, diabetes, hypertension, IBD etc. (Btw *stuff is a highly technical term!). So why are emulsifiers in so many foods? The list of foods that contain emulsifiers is long.. margarine, packaged breads, ice cream, chocolate, mayonnaise, processed meats, sauces, cakes, muffins, sliced cheese and non-dairy milks etc etc. Yes, you can avoid these foods but why are emulsifiers used/allowed in the first place? I’m assuming to extend food shelf life but is that the only reason? Thanks
