I did my apprenticeship at a beef and seafood restaurant. The night I was working the grill an order for a blue steak came in and I was terrified, but I (by the grace of god) managed to cook it correctly, the customer said “one of the best steaks he’d ever had”. Later we found out he was a food critic. I will die with that being one of the highest points in my career 💖

I know you must let steak it rest but the trouble is I don’t find it hot enough after resting for 5 minutes and I love my food hot .

The more you move and agitate the steak the better it cooks, also controversial but it shouldn’t be, you don’t need to rest steak, if it’s desired temp then slice

That’s a perfect medium rare steak! I usually cook my ribeyes black and blue with a char on the outside and red in the middle, not pink. Some folks call that Pittsburgh style. I also use cast-iron pans that hold lots of heat for a good sear. Looks delicious!

I only ever see people cook 1 steak, what if you're cooking for more people? this is where I go wrong and someone ends up with a naff one and you end up not really eating together as they're ready 1 at time. 🤣
