@the.debt.chronicl: One of my favorite budget friendly meals is this baked chicken pesto & tomatoes dish! 6 chicken breasts - cut in half 1 small jar pesto 3/4 cup shredded mozzarella cheese 3 Roma tomatoes - sliced Salt Pepper Jasmine rice Chicken broth Preheat oven to 425°. Place 1/3 of the pesto jar on the bottom of the 9x13” glass baking dish. Place chicken in single layer onto baking dish and season with salt and pepper. Put remaining pesto on top of chicken and spread evenly. Place sliced tomatoes on top of pesto chicken and add a little extra salt to tomatoes. Sprinkle mozzarella cheese on top and place in oven. Bake at 425° for 20-25 minutes or until chicken has reached an internal temperature of 165°. I like to broil this dish for a few minutes at the end just to get the mozzarella cheese crispy. Make rice according to directions using chicken broth in the place of water. Serve the pesto chicken over rice and enjoy! #budgetmeals #budgetingtips #payingoffdebt #debtfreejourney
