@elannamyers: Rigatoni with Mushroom, Spinach, & Italian Sausage✨ Ingredients: 1 pack @petespasta protein rigatoni (8 ounces) 1/2 pound spicy Italian sausage 8 ounces mushrooms, sliced 2 cups baby spinach 3 cloves garlic, minced 1 jar @Yo Mama's Foods basil marinara 1/2 cup reserved pasta water 1/4 cup grated Parmesan Instructions: 1. Cook pasta according to the package. I cooked this pasta for 11 minutes. Reserve 1/2 cup pasta water then drain. 2. In a large pan over medium-high heat, cook the Italian sausage, about 6-8 minutes. Remove sausage to a plate, leaving some of the fat in the pan. 3. Reduce the heat to medium then add the mushrooms in an even layer. Leave the mushrooms undisturbed for 3 minutes before stirring them about. 4. Add minced garlic and allow to cook for 30 seconds. Add your marinara, allowing to cook and heat for 2 minutes. 5. Return the Italian sausage to the pan then add the pasta. Stir to combine, adding pasta water as necessary - I used about 1/4 cup. 6. Stir in the spinach, cooking for a few minutes until the spinach has wilted. 7. Add the 1/4 cup grated Parmesan.
