Crispy Smashed Potatoes with Whipped Feta and Hot Honey DRIZZLE-COOKING WITH BRIGHT EYES Ingredients: For the Potatoes: 1 lb (450 g) baby potatoes 2 tbsp olive oil ½ tsp salt ¼ tsp black pepper For the Whipped Feta: 1 cup (200 g) feta cheese ¼ cup (60 g) Greek yogurt 1 tbsp olive oil For the Hot Honey: 2 tbsp honey 1 tsp chili flakes Garnish: Fresh parsley or dill Directions: Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper. Bring a pot of salted water to a boil. Add potatoes and cook for 15–20 minutes until fork-tender. Drain well. Place potatoes on the baking sheet and gently smash each one using the bottom of a glass. Drizzle with olive oil and season with salt and black pepper. Roast for 25–30 minutes, flipping once halfway, until crispy and golden. Meanwhile, blend feta, Greek yogurt, and olive oil until smooth and creamy. In a small saucepan, warm honey with chili flakes over low heat for 2–3 minutes. Spread whipped feta on a serving plate, top with crispy smashed potatoes, and drizzle with hot honey. Finish with fresh herbs and serve immediately. Prep Time: 15 minutes | Cooking Time: 45 minutes | Total Time: 1 hour Kcal: 320 kcal | Servings: 4 servings
