Pumpkin Cheesecake Muffins 🍂🧁✨ Makes: 12 muffins Pumpkin Muffins * ⅓ cup vegetable or canola oil * ½ cup packed light brown sugar * ¼ cup granulated sugar * 1¼ cups pumpkin puree * 1 large egg * ⅓ cup whole milk * 1 tsp vanilla extract * 1½ cups all-purpose flour * 1 tsp baking powder * 1 tsp baking soda * ½ tsp salt * 2 tsp pumpkin pie spice Cheesecake Filling * 6 oz cream cheese, softened * 2 tbsp granulated sugar * ½ tsp vanilla extract * 1 tsp all-purpose flour Instructions 1. Preheat oven to 350°F. Line a 12-cup muffin pan with cupcake liners. 2. In a small bowl, mix together the cream cheese, sugar, vanilla, and flour until smooth. Set aside. 3. In a large bowl, whisk together the oil, brown sugar, granulated sugar, pumpkin puree, egg, milk, and vanilla. 4. Add the flour, baking powder, baking soda, salt, and pumpkin pie spice. Stir until just combined. 5. Fill each muffin liner about ½ full with batter. Add about 1 tablespoon of the cheesecake filling to the center, then top with more batter 6. Bake for 20–24 minutes 7.
