Recipe below 🤎  Coffee Soak:  1 cup strongly brewed coffee 3 tbsp sugar Cream Filling:  4 egg yolks 1/2 cup granulated sugar 8 oz mascarpone cheese, softened 1 cup heavy whipping cream 2 tsp vanilla extract pinch of salt  1 package ladyfingers Unsweetened cocoa powder, for dusting Coffee ☕️ In a bowl, combine the hot coffee and 3 tablespoons sugar. Stir until the sugar is fully dissolved, then set aside to cool completely. Egg Mixture 🥚 Fill a saucepan with 1–2 inches of water and bring to a gentle simmer. In a heatproof bowl, whisk together the egg yolks and ½ cup granulated sugar. Place the bowl over the saucepan, making sure the bottom of the bowl does not touch the water. Whisk constantly for 5–7 minutes, until the mixture becomes pale, thick, and fluffy. Remove from heat and let cool for about 10 minutes. Filling 🤎 In a separate bowl, beat together the heavy whipping cream, mascarpone cheese, and vanilla extract until thick and fluffy. Gently fold the whipped cream mixture into the cooled egg yolk mixture until fully combined. Assembly ✨ Quickly dip each ladyfinger into the cooled espresso mixture, about 1 second per side. Do not soak. Arrange a single layer of dipped ladyfingers in the bottom of an 8×8-inch dish. Spread half of the filling evenly over the ladyfingers. Add a second layer of dipped ladyfingers, then top with the remaining filling and smooth the surface.  Cover and refrigerate for at least 6 hours, preferably overnight.
